Yum Yum Chicken - creamy chicken casserole topped with cornbread stuffing. Cooked chicken, cream of chicken soup, cream of celery soup, sour cream, stuffing mix, chicken broth and butter. Can make ahead and freeze for later. Great quick weeknight casserole recipe! Kid Friendly!

This recipe is from Plain Chicken reader, Cheryl Ener.  This is her husband's grandmother's chicken casserole recipe.  Cheryl emailed me this recipe back in June, and I am just now posting it (slacker - I know).

I don't have a really good traditional chicken casserole recipe, so I was anxious to try this one out.  I used rotisserie chicken and this came together in minutes.  It was the perfect weeknight meal!  We both really enjoyed this casserole.  We now know why it is called "Yum Yum Chicken" - YUM!  Thank you so much for sharing this treasured family recipe, Cheryl!

I had a disastrous experience a few years ago when I used the salt and sugar method. I popped the chicken wings in the fridge but totally forgot about them! The result was pure salt that only looked like a chicken wing. So I always caution that if you do use the salt/sugar/water method, only do it for up to 4 hours. With buttermilk, there is no time factor.

Ingredients:

  • 1 (10.75-oz) can Cream of Celery soup
  • 1 box Cornbread stuffing, uncooked (Stove Top or Pepperidge Farm)
  • 1 cup chicken broth
  • 1/2 stick melted butter
  • 1-1/2 lb chopped cooked chicken
  • 8-oz sour cream
  • 1 (10.75-oz) can Cream of Chicken soup

Instructions:

  1. First, Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  2. Second, Spread chicken in the bottom of the dish. In a separate bowl, mix together the cream of chicken soup, cream of celery soup and sour cream. Spread over the chicken.
  3. Next, Sprinkle the uncooked stuffing over the soup mixture, (note: if herb packet is not mixed with stuffing mixture, top stuffing with herb packet). Mix together the broth and the melted butter and pour evenly over all.
  4. Bake, uncovered, for 30 minutes.
